Valentine’s Day Cupcakes

Nothing says “I love you” more than taking the time to make some delicious baked treats for someone special; share the love by making these pretty Valentine’s Day Cupcakes.

The cupcake ingredients (approx 10 cupcakes):

  • 125g of Stalk or unsalted butter
  • 125g caster sugar
  • 2 free ranged eggs
  • 125g self-raising flour
  • 150g blueberries
  • 4 passion fruit, sieved pulp only
  • a drop of milk

The icing ingredients: 

  • 400g icing sugar
  • 160g Stalk or butter
  • 1 drop vanilla essence
  • 2-3 drops of pink food colouring
  • 50ml milk
  • pink decorations

Step 1: Preheat oven on gas mark 4.  For the cupcakes, beat together the butter and sugar until you achieve a pale, creamy colour.  Beat the eggs and slowly add to the mixture, stir until well combined.

Step 2: Fold in the flour, blueberries and the sieved passion fruit pulp and stir until almost smooth.  Add a drop of milk to loosen the mixture.

Step 3: Sit the paper cases into a muffin tray, and divide the mixture into the cases and bake for 20 minutes.  Once cooked, set aside on a rack to cool down.

Step 4: For the icing, use an electric whisk, cream the butter and icing sugar together until light and creamy.  If you do not have an electric whisk, use the back of a wooden spoon and spread around the bowl, until all blended, then use a whisk to fluff up the mixture.  Add the vanilla essence and food colouring and then slowly add in the milk, whisk to create a smooth consistency.

Step 5: Spoon the icing into a piping bag, using a star shaped nozzle and decorate the cakes as desired.  Sprinkle with some edible decorations.
