Since starting my blog, I have been open to cooking new things, to keep it interesting and also share any useful recipes with you lovely people.  I’ve been trying to eat a lot healthier and I saw the cauliflower rice whilst doing my online shop and decided to give it a go; I must say I’m by no means a fan of cauliflower, I’m more of a broccoli girl but I would definitely eat my spicy cauliflower rice ALL-DAY-LONG!

Prep time: 5 minutes

Cooking time: 10 minutes

Ingredients to serve 2:

  • 400g of Cauliflower chopped
  • 1 sweet red pepper
  • 2 handfuls of mushrooms
  • 1/2 an onion
  • 2 garlic cloves
  • 1 chilli pepper
  • a pinch of salt
  • a pinch of pepper
  • a pinch of chilli
  • 2 tablespoons of soy sauce
  • cooking olive oil/spray

Step 1: Finely shred the cauliflower into small chunks by using a grater or a blender, or you can be lazy like me a buy it here, I would go with the latter.  Then chop up the sweet red pepper, mushrooms, onion, garlic and chilli pepper.

Step 2: To a pan, add a table spoon of olive oil or a  low cal cooking spray (My friend Jordan got me a really good canola cooking spray from costco, I love it and it lasts for ages), add the red pepper, mushrooms, onion, garlic and the chilli pepper and cook for 3-5 minutes.

Step 3: Add the cauliflower, salt, pepper and soy sauce and stir.  If you feel it may need more soy sauce, add more.  Cook for a further 3-5 minutes, to let the flavours blend and keep the ingredients al dente.

Step 4: Eat as much as your stomach allows you to!
